Egg Strips
3 large eggs
3 tsp water
3 tsp sugar
dash salt
Gently beat eggs, water, sugar and salt together. Oil a heated frying pan and pour a thin layer of egg mixture into the pan. Any excess egg mixture should be removed. Cover the pan to quick cook the topside of the egg surface. Cook the egg sheet for 7 to 10 seconds and with spatula, gently slide the egg sheet onto a cutting board. Cool the egg sheet before cutting.
Once cooled, cut the egg sheet into 1 cm strips to use as a filling for sushi rolls.
